We have the 16cm and 20 cm classic sauciers, and use them quite a lotäóîthe 16cm, which I thought would be used not that often, has really surprised me. Perfect for reducing enough fruit to serve with crepes, or for making a small amount of a glaze that would be lost in a bigger pan. The 18cm hits a sweet spot in terms of size; my son was thrilled to get it as a gift from us. Copper offers such perfect heat control for reductions.
