Signature Line or Classical Line?

What’s the difference between the Classical Line and the Signature Line?

Believe it or not, that’s the most common question we receive from customers and the short answer is “not much”.  Both of lines have the exact same vessels.  Both lines primarily are made from 2.5mm bimetal and both have the signature Falk brushed-copper finish.  However, our Classical Line has the traditional cast-iron handles while the Signature Line’s handles are made of stainless steel.

OK, so which one is “better”?

Yes, this is the second most common question.  Unfortunately it’s a question for which there is no good answer.  Cast iron does conduct heat better than stainless steel, so you may find that the Signature Line handles stay cooler to the touch for a slightly longer period of time.  However, we feel the difference in heat conductivity in the handles is negligible.  The real difference between the two lines is in the styling.  The Signature Line pans tend to have a lower profile and a more modern look. So, at the end of the day it really comes down to personal preference.

Is one line more balanced than the other?

This is a great question because it goes to the functionality of our cookware.  We believe Falk Culinair makes the most beautiful copper cookware in the world, but the performance is what keeps our customers coming back again and again.  Because so much care has gone into the design of Falk cookware, both lines are designed to be extremely well-balanced.  In this respect, neither line is better than the other.

What about the cast iron in the Classical Line, won’t it rust?

Not if you take proper care of them.  Our Classical Line cookware comes with a temporary protective coating from the factory to protect the cookware from oxidation at the warehouse.  However, this coating

will dissipate over time.  To protect your handles from oxidation, we recommend occasionally curing them with vegetable oil.  Some people never cure there handles and never experience oxidation.  So your results may vary.  Either way, much like a cast iron skillet, the Classical Line handles will provide a lifetime of rust-free service if cared for properly.
